Introduction

Number of Servings: 16

Ingredients

    2 cups flour


    2-1/2 tsp baking powder


    1/2 tsp salt


    5 Tbs butter - in small pieces


    3/4 cup buttermilk


    3 Tbs honey (make sure it is in liquid form)



Directions

Preheat oven to 400 degrees. Combine dry ingredients - stirring well. Cut butter into dry ingredients with a pastry blender until the texture of cornmeal. Place bowl in refrigerator for about 10 minutes until remaining ingredients are assembled.





Combine buttermilk & honey. You will need to stir until honey dissolves and buttermilk is the color of light caramel. Add to chilled flour mixture - stirring gently with a fork or spatula just until moistened.





Turn onto lightly floured surface. Knead just until combined. Roll dough into a 9” x 5” rectangle. Sprinkle with a light dusting of flour, spreading with fingers. Fold dough into thirds - as if folding a letter. Re-roll dough again into a 9” x 5” rectangle. Dust top lightly with flour once again. For the second time, fold dough into thirds as before. Roll to 3/4” thickness. Cut dough with biscuit cutter, or cut into squares. Place one inch apart on ungreased baking sheet. Bake at 400 degrees for about 12 minutes - watching closely near end of baking time.
