Introduction

A lower carb, lower sugar version of banana bread that relies more on the natural sweetness of the banana. Ingredients

    1 cup white flour
    1 cup whole wheat flour
    1/2 tsp salt
    1/2 c salted butter
    1/4 c sugar
    14 packets splenda
    2 extra large eggs (Eggland's Best)
    1 cup mashed banana (very ripe)
    1/3 c half and half cream
    1 tsp lemon juice

Directions

Cream butter and sugar and splenda. Add eggs and bananas, salt and baking powder and mix well. Combine lemon juice with cream in a cup; it will curdle. Alternately add the flours and the curdled cream to the butter and banana mixture, blending well after each addition. pour batter into a well-buttered 9X5X3 inch loaf pan. Bake 60 minutes in a pre-heated 350ºF oven.
