Introduction

Makes a great lunch! Have cooked chicken on hand in fridge. Makes a great lunch! Have cooked chicken on hand in fridge.

Ingredients

    1/2 whole wheat pita
    3 ounces cooked chicken
    1 cup chopped iceberg lettuce
    1 ounce of cooking onion chopped
    2 small garlic cloves minced
    1/4 cucumber diced
    8 or 10 grape tomatoes halved
    2 tbsps sun dried tomato and oregano low fat dressing
    1 tbsp grated parmesan cheese

    Bake pita in oven for 4 minutes. Place pita on dinner plate and add chicken to pita. In separate bowl combine lettuce, onion, garlic, cucumber, tomatoes, dressing. Toss well then spread over chicken. Sprinkle parmesan cheese on top. Enjoy!
