Ingredients

    All purpose flour, 2 cups
    Baking Powder, 3 tsp
    Salt, 0.5 tsp
    Egg, 1 large
    Vegetable Oil, 0.25 cup
    Granulated Sugar, 0.5 cup
    Milk, 1%, 1 cup
    Drained crushed pineapple, 0.75 cup

Directions

Preheat oven to 400F and grease 24 muffin cups.
Combine the dry mix in a large bowl.
In a smaller bowl, beat egg and add oil, sugar, milk and pineapple, (making sure the pineapple is well drained).
Add wet mix to dry mix and stir until combined but lumpy.
Fill muffin cups half full.
Bake 20-25 min. at 400F.

    my husband and I loved these pineapple muffins! The reason I picked this recipe: I could make it from scratch. All others had a mix in the ingredients listing. They tasted sweet and juicy. I will make them again! - 12/31/11

    Seems to be a bit too much flour....
    I added some coconut and walnuts to give it a tropical feel!
