    93% fat free ground turkey
    whole wheat lasagna noodles (8)
    fat free ricotta cheese (1 container or @ 15 oz)
    2 cups Kraft 2% Italian Cheese Blend
    1 egg
    1/2 cup grated parmesan cheese
    1 small onion, chopped
    1.5 cups bell peppers, chopped (I use red, green, and yellow for color)
    1 jar chunky pasta sauce
    2 tsp worcestershire sauce
    Emeril's Original Essence (to taste)
    ground oregano, to taste
    1 box (9 oz) frozen spinach


1. Brown ground turkey with chopped onion and bell pepper. Add worcestershire sauce, oregano, and Essence. Set aside.

2. At the same time boil the lasagna noodles until done.

3. Also put spinach in microwave and cook according to manufacturer's directions. Drain.

4. Combine ricotta, 1 cup shredded italian, and parmesan cheeses with the egg and spinach. Stir well.

5. Pour 1/2 of pasta sauce into bottom of 12x8 baking pan.

6. Take each noodle and spread with cheese mixture from one end until about 1 in. from the other. Add ground turkey mixture on top.

7. Tightly roll each noodle towards the empty end and place seam side down in pan.

8. Pour remaining pasta sauce over the noodles and bake in 400 degree oven for about 30 minutes or until hot and bubbly.

9. Sprinkle remaining shredded cheese evenly over the noodles and return to oven until cheese is melted.
