    2 cups oat bran
    1 tbsp baking powder
    1/4 cup brown sugar
    2 egg whites
    1/3 cup molasses
    1 cup buttermilk
    1/2 cup applesauce
    1 cup dates
    12 pecans or dates for top


Preheat oven to 450
Stir together bran b. powder and brown sugar.
Add dates and mix.
With mixer beat egg whites until foamy and then add molasses, butermilk, applesauce.
Fold in dry mixture.
Fill 12 muffin tins.
Top each mufin with a pecan or date.
Bake 10-12 minutes. Be careful because they will burn if in too long!

  • These were great! First time I tried them, forgot to pull them out out of the oven after the timer went off. They a little dry.
