Ingredients

1 pound skinless boneless chicken breast
1 green 3 red, orange, yellow (whatever mixture you like) peppers , roughly chopped
I large onion, halved and sliced
1 cup or so baby carrots
1 handful (more or less to taste) dried garlic
1 can lite coconut milk
1 can tomatoes
curry powder or paste to taste
1/2 cup plain fat free yogurt
Directions
Cube and brown chicken.
Add dried garlic when chicken starts to brown.
Cut onions and add to pot with chicken, cook until carmelized. Meantime, rough chop potatoes and peppers.
Add carrots, potatoes, peppers to pot, add tomatoes and coconut milk.
Add curry powder and any other spices you want at this point.
Cook until carrots and potatoes are tender enough for you.
Taste sauce to make sure it's spicy enough. If you've gone overboard with the spices, add more yogurt, it'll help. Keep in mind, that'll also add a few more calories, but it IS fat-free!
Stir in yogurt, let simmer 5 min, serve!
