Number of Servings: 24


    1 cup butter, softened
    2 cups sugar
    3 cups mashed ripe bananas (about 6 bananas)
    4 large eggs
    2 1/2 cups flour
    2 tsp baking soda
    1 tsp salt


Preheat oven to 350

-cream butter and sugar.
-add bananas and eggs and mix until light
-sift dry ingredients and add to butter mixture. Mix until well incorporated. Do not overmix
-pour into 2 loaf pans lined with parchment paper
- bake for 45 minutes or until top springs back to touch.

Serving Size: Makes 2 loaves, 12 slices per loaf (24 servings)
