Introduction
I took a very involved recipe and simplified for my use. I hope any that try it enjoys it as much as I do. I took a very involved recipe and simplified for my use. I hope any that try it enjoys it as much as I do.Number of Servings: 2
Ingredients
-
6oz Pineapple Juice, or juice of your choice
Juice of 1 lemon
1 TBSP Pure Honey by Burleson's
1-2 TBSP Balsamic Vinegar
Directions
1. Mix all ingredients except vinegar very well, pour over chicken (I used 8 oz breast cut in half) in zip top bag, placing bag in shallow pan so that if it leaks it won't get all over your fridge.
2. Marinate for 24 hours if you can. if not 1/2 hour will work.
3. When ready to grill pat the chicken dry. (I used a Panini Press Grill but works just as well in a saute pan.)
4. Pour the 1/2 cup of the marinade into a small sauce pan adding the Balsamic Vinegar.
5. Bring to a boil then reduce heat and continue cooking stirring occasionally until it is reduced by half (should have 1/4 cup of sauce then).
6. Pour over chicken and enjoy.
Serving Size: Makes approx (2) 1/4 cup servings
