super easy to make and EASY to mix around and play with
make it vegetarian/vegan friendly with veggie stock.
Wit such low calories per serving, when we ate it we slaped on a small slice of chedder cheese for extra YUMM.

Ingredients

    ** note, I actually used 1 full can of light coconut milk, I couldnt find any light coconut in sparks list of ingredients.**

    Cauliflower, raw, 1 head,
    Broccoli, fresh, 1 bunch
    Onions, raw, 1 large
    2 Small or 1 medium potato
    Garlic, 6 cloves
    Chicken Broth, 5 cup
    Basil, 2 tbsp
    Pepper, black, 1 tbsp
    Pepper, red or cayenne, .5 tsp
    *Coconut Milk, .5 cup
    1-2 bay leaf

Directions

roughly chop up broccoli, cauliflower, onion, potato ( you can add the garlic here but I like a STRONG garlic taste so I wait to add it to till very end) put in large pot with stock and bay leaf. Cover and let simmer until mushy (about 30 minutes or so depending)
remove bay leaf
Using a hand mixer, food processor, blender (or whatever you've got for mashing)
start to blend the ingredients together adding in the coconut milk and the spices ( go easy on the spices, you can always add more later)
Enjoy!
this recipe can easily be modified to include any veggies you have in the fridge and any spice preference you have. let me know your own variations!
