Introduction

This was a recipe I found while looking for crock pot recipes that did not use canned condensed soup. I adapted the original to our family's taste and this is the outcome. Delicious weekday recipe. Easy. I recommend a grass fed london broil to up the health factor.

Serve over mashed potato and enjoy with a whole wheat dinner roll.

Ingredients

    2 cup onion
    16 oz bag fresh baby carrots
    Olive oil
    1.5 - 2 pound boneless top round steak (London Broil), trimmed
    2 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
    1 can light beer
    4 tablespoons molasses
    2 TBL cornstarch dissolved in beef broth (or water)

Directions

1. Place onion and carrots in a large crock pot

2. Heat a large nonstick skillet over medium-high heat; use just a bit of olive oil to keep the meat from sticking . Add the london broil brown each side. I like to use a high heat and get a nice carmelization on both sides of the meat - 3 to 5 minutes per side.

3. Move the meat to the crock pot ; pour the beer over the meat and then dump the cans of tomatos on top of the meat. Cover and cook on High for 5 to 6 hours or Low for 8 hours til steak is very tender.

4. Shred steak with 2 forks in slow cooker; stir in molasses and cornstarch. Let steak stand 10 minutes before serving.
