Number of Servings: 8

Ingredients

    1 pound ground beef
    1 large bell pepper, chopped
    1/2 large onion, chopped
    2 cloves garlic, minced
1 28 oz. can diced tomatoes, undrained
    2 tsp chili powder
    1.5 cups brown rice

Directions

Crumble and brown the ground beef in a skillet. Drain, then cook the onion, pepper, and garlic in the skillet until the onions turn translucent. Replace the beef and add the tomatoes and chili powder, stirring thoroughly.
If the skillet is large enough, add the rice and water according to the rice's cooking instructions; bring to a boil, cover, and simmer until rice is cooked. Otherwise, cover the skillet and allow it to cook over low heat as the rice is prepared. When the rice is finished, serve with the ground beef mixture from the skillet.
