Ingredients

    1 medium onion, diced
    1 tbsp light butter or margarine
    1/2 tbsp olive oil
    1 tablespoon flour
    1 tbsp chili powder
    1 tsp cumin
    1 cup medium salsa
    12 oz frozen corn
    1.5 cups black beans, cooked
    2 cups vegetable broth
    i tub (10 oz) Philadelphia Cooking Creme
    .5 cup skim milk

Directions

Saute onion in olive oil and butter over medium heat until translucent. Add flour, cumin and chili powder.

Add broth, corn, beans, and salsa. Bring to a boil.

Lower heat and wait for mixture to stop boiling. Stir in cooking creme and milk. Heat through, without allowing the mixture to boil.

Makes about 7 1-cup servings. Goes great with tortilla strips sprinkled on top.
