Ingredients

    Olive Oil
    1 small onion, minced
    1/2 red bell pepper, minced
    4 cloves garlic, minced
    1/2 tsp salt
    2 cups quinoa, rinsed
    1/2 cup white wine
    2 1/2 cups stock or broth

Directions

Saute onion and peppers for about 8 minutes. Add garlic and saute for 30 seconds. Add quinoa salt and wine. Let simmer until absorbed. Add stock to just cover quinoa and simmer on medium heat. When you no longer see the liquid bubbling above the quinoa, add more stock to just cover. Keep doing this until all stock is used. Simmer on medium low until all liquid is dissolved and quinoa is soft, yet firm. Serve as a side dish, under baked chicken or fish, or by itself. This is a very versatile recipe, feel free to add extra veggies, other protein sources such as meat, tofu or nuts, but be sure to add to the calories!
