Ingredients

    300 g bacon ends & pieces, extra lean, minced
    4 med. sweet onions (Vidalia, Walla Walla or red), sliced
    1 head garlic, minced
    3/4 cup brown sugar (to taste)
    1 cup cider vinegar
    salt & pepper to taste

Directions

In a large saute pan, cook minced bacon on medium until rendered and drain any excess fat. Add sliced onions and salt. Turn heat down to medium-low and cook until onions are translucent. Add garlic and cook, stirring occasionally, another 5 minutes. Add 1/2 cup brown or raw sugar and all vinegar. Simmer until onions are caramelized, stirring occasionally. Taste for sweetness and add remaining sugar, if needed. Adjust salt and pepper.
Cool and enjoy.
