Ingredients

    1 lb Ground Turkey 99% fat free or low fat hamburger

    1 cup chicken stock or broth. I use low fat low sodium

    1 16 oz can of Old El Paso Fat Free Re fried Beans

    1 14 oz Del Monte Petite Cut Diced Tomatoes (No Salt Add)

    1 15oz can Bush's Black Beans (not seasoned) and rinsed

    1 15 oz All Natural Tostitos Chunky Salsa....I use mild but use whatever strength you like

    I bag of Birds Eye Steam Fresh Super Sweet Corn or I have
    used a box of Green Giant frozen corn without butter
    or a 15 oz can of canned corn drained. Frozen should be
    microwaved before adding to soup.

Directions

First scramble cook the turkey or hamberger adding a small amount of chicken stock if needed

While turkey is cooking, add a cup of chicken stock (I use low fat and low salt ) to a soup pan. To that add re fried beans stirring until the beans dissolve in the stock. Then add all other ingredients to the pot. Stir while adding and let simmer for anywhere from an hour to an hour and a half.

Serve with light sour cream, Multigrain Tostitos scoops and reduced fat 4 cheese Mexican blend.

This soup is very filling....I often use it for main course at dinner time. Enjoy and let me know what you think
