Ingredients

    5 medium head of cauliflower (chopped)
    10 small potatoes (cubed ˝ inch)
    5 chili (chopped)
    2˝ cup diced tomatoes
    2˝ cup peas
    10 tablespoon oil
    5 tablespoon Margarine
    10 tablespoon garlic, minced
    5 teaspoon cumin
    2 Tablespoons turmeric
    salt to taste

    Optional Spices
    2 Tablspoons coriander
    5 tablespoons cilantro, chopped
    2 Tablespoons garam masala
    1 teaspoon fenugreek seeds (methi)
    10 bay leaves (tej patta)

Directions

1 Sauté Fenugreek (Methi) in oil till it turns black. Add Bay leaf.
2 Add potatoes, half of the spices and sauté for few minutes in medium heat.
3 When potato is half done, add Cauliflower.
4 Add tomatoes, peas, and chili and sprinkle rest of the spices over it. Cook for few minutes.
5 Serve hot with Basmati rice or Roti.
