Introduction

Ingredients

    Beans, dry black, 2 cup
    Carrots, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Onions, raw, 1 cup, chopped
    Chicken Broth, 3.5 cup (8 fl oz)
    *Cumin, ground, 1.5 tsp
    *Coriander leaf, dried, 1.5 tsp
    Salt, 1 tsp
    Bay Leaf, 2 leaves
    Thyme, ground, 1 tsp
    Garlic, 4 cloves minced

    At the end of cooking time, mix 2 TBSP olive oil & 2 TBSP flour in a small bowl - stir mixture into beans & allow to cook for 30 more minutes to thicken juices.

Directions

Soak beans overnight in cool water. In the morning, put it all in the crockpot & cook for 8-10 hours on low. Serve with brown rice and/or a tortilla. We also like a dollop of sour cream & salsa with it. It is DELICIOUS!!
