Introduction

A yummy combination of lean pork and chili, this is what I make when I don't want to mess with chili pods or the blender. Is excellent with warm corn tortillas. Number of Servings: 8

Ingredients

    2 lbs. cubed lean pork
    1 tsp salt (or to taste)
    1 tbsp garlic powder
    1 tbsp onion powder
    1/2 tbsp ground oregano
    4 tbsp chili powder (more or less depending on spice level desired)
    2 tbsp canola oil
    1/4 c flour
    1/2 c water

Directions

Save time and buy cubed pork from your butcher or the meat department in the store. Heat the oil in a large skillet (preferably cast iron) over medium heat. Add the cubed pork, onion, garlic, salt, and oregano. Cook about 10 minutes, uncovered, or until no longer pink in the middle, stirring occasionally. Add the chili powder and stir to coat. Stir in the flour and let toast for 1 minute. Turn heat to low, add the water and mix to distribute evenly. Simmer covered 5 minutes until thickened stirring frequently to prevent lumps. Add more water if the sauce appears too thick.

    Incredible!
    My whole family loved this recipe! I used less chili powder and more flour and much more water (we like lots of gravy) and simmered it for quite a while longer, but other than that stayed pretty close to the recipe. Thank you MILEYNA! - 10/12/13
