Introduction

Slightly modified from Eating Clean. Their recipe uses unsalted almond butter and 1/4 tsp sea salt. I substituted salted peanut butter for the unsalted almond butter. Ingredients

    1 cup natural peanut butter
    1 egg
    1/2 cup coconut sugar
    1/2 tsp baking soda
    3 oz dark chocolate over 70%cocoa (I used 85%), broken into small pieces

Directions

Preheat oven to 350 F.

Mix all ingredients in a bowl until combined. Drop or scoop onto a baking sheet. Bake for 9-12 minutes or until lightly browned. Let cool on baking sheets for 5 minutes. Remove to a wire rack and let cool for 15 more minutes.

Serving Size: Makes 16 cookies
