Introduction

my own low carb recipe. I could not accept that I could no longer eat bananas on low carb so........ I came up with this recipe :) The kids are telling me it is yummy! my own low carb recipe. Number of Servings: 16

Ingredients

    1 cup sucralose [or splenda bulk bag - fluffy]
    1/3 cup butter [softened]
    2 eggs
    2 ripe bananas, mashed
    1/3 cup water
    1/2 cup Atkins bake mix
    1/2 cup bob's red mill soy flour
    2/3 cup bob's red mill almond meal [almond flour/ground almonds]
    1/2 teaspoon banana extract
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon baking powder
    1/2 cup chopped pecans

Directions

Preheat oven to 325 degrees Fahrenheit. Grease bottom of a large loaf pan [or 2 small ones]. Combine all ingredients in large bowl. Pour batter into pan(s). Bake at 325 degrees Fahrenheit for 40 minutes. Let rest [cool]. Cut into equal size servings. Makes 16 slices.
