Ingredients

    Lundberg Wild Blend Brown Rice-1/2 cup dry
    Olive Oil, 1 tbsp
    Tomatoes, red, ripe, raw, year round average, 5 medium whole diced
    Asparagus, fresh, 6 spear, medium chopped
    Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" chopped
    Jalopeno pepper, 1 minced (optional)
    Onions, raw, 1 small chopped
    Garlic, 3 cloves minced
    Mushrooms, fresh, 1 cup, chopped
    Black Beans - PC Blue Menu, 540 ml can
    Cumin 1 tsp
    Paprika, 1 tbsp
    Chili powder, 1 tsp
    Cilantro, dried, 1 tsp

Directions

Cook rice as per instructions.
While rice is cooking, prepare vegetables. Put all vegetables except tomatoes in a large deep dish fry pan and saute in olive oil until onions are clear. add tomatoes and seasonings and simmer for 5-10 minutes on medium low heat. Add rice and beans, continue to simmer for another 10 minutes.

This is great on its own, or topped with cheese and served with nacho chips.
