Introduction
My husband loves my chicken alfredo pizza, where I slather the crust with cream cheese mixed with herbs and alfredo sauce, top it with more alfredo sauce, and load it up with cheese. He's been craving it lately, but I knew I needed to make some changes! Here's what I came up with. It was really tasty! I didn't even miss the gobs of cheese! Ingredients
-
1 Mama Mary's Whole Wheat Pizza Crust
1/2 c Sargento Light Ricotta Cheese
1/4 c Philadelphia 1/3 less fat Cream Cheese
5 oz frozen spinach (half of a box)
2 oz Classico Light Alfredo Sauce
5 thin slices of onion
5 oz canned artichokes (unmarinated), drained
2 oz Oscar Mayer Italian Chicken Breast
1t Dried Rosemary
Olive Oil Pam Spray
2 oz Weight Watcher's Italian Style Cheese
Directions
Thaw and drain spinach thoroughly, I used microwave so it would be warm.
Using Pam Olive Oil Spray, saute onion slices over med heat until translucent, 7-10 minutes. Add chopped artichokes and 1t rosemary, cook another 3-5 min.
Meanwhile, in a mixing bowl, combine ricotta, cream cheese, spinach, and any desired seasonings (not included in nutritional info, but I recommend red pepper flakes, Italian seasoning, pepper, a touch of salt, etc.).
Spray outer edges of pizza crust with Pam. Spread spinach mixture on top. Sprinkle onion and artichoke mixture, chicken, then top with Italian cheese blend.
Bake according to pizza crust instructions (425 for 8-10 min)
Serving Size: Makes 4 2-slice servings
