Number of Servings: 18

Ingredients


    9 whole large eggs
    6 egg whites
    4 oz of Soyrizo, Vegan Chorizo
    1 onion chopped
    2 cups of shredded Cheddar Cheese, divided
    1 cup fresh Spinach
    Salt and pepper to taste
    oil to saute onions and grease pan.

Directions

Saute onions with chorizo until translucent. Add spinach until limp. Place in mixing bowl and add eggs and egg whites. Beat eggs with mixture and add 1 cup of the cheese. Add salt and pepper to taste.
Pour all ingredients into a greased baking pan. (I used the miracle brownie pan 12x8)
Sprinkle remaining cheese on top. Bake 25-30 min until toothpick can be removed clean from center.
