These are great little pumpkin popover muffins that can be had for brunch, breakfast or dessert! Freeze and reheat in the microwave for one minute. Ingredients

1/2 Nonfat Milk
3/4 cup Egg whites
2 large Eggs
1/2 cup Whole Wheat Flour
1 dash of Salt
1/4 cup Brown Sugar
1/2 cup Pumpkin, canned, without salt
1 tsp. Pumpkin Pie spice
1 tsp. Vanilla Extract
1 Tbsp. Smart Balance Light Buttery Spread
Directions
Preheat oven to 425 degrees. Melt Smart Balance spread in microwave for 15 seconds. In large bowl (with pour spout) mix sugar with butter. Add eggs and egg whites and milk and whisk well. Add pumpkin. Add flour and salt, mix well. Add vanilla. Spray Pam on a 12 cup muffin tin. Fill muffin cups 3/4 full. Bake for 20-25 minutes until toothpick comes out clean. Enjoy! You can freeze them once they have cooled and reheat as a breakfast pumpkin quiche-muffin!
