Ingredients

4 - Chicken Breast (bone and skin removed)
1 3/4 - Cups Black Beans (drained and rinsed)
1 Can - Yellow Sweet Corn
2 tbsp - Extra Virgin Olive Oil
2 Cups - Tomato Sauce w/diced tomatoes
1 tsp - Salt
1 tsp - Black Pepper
1 tsp - Chili powder
Directions
1. Heat Skillet and add olive oil
2. coat one side of chicken with 1/2 of the chilipowder, pepper and salt mixture
3. place chicken spice side down in hot oil
4. sprinkle the rest of the spice mixture on top of chicken
5. cook for 6 minutes on medium heat (do not turn over)
6. turn over and cook for 6 more minutes
7. add corn, black beans, and tomatoes
8. lower heat and simmer covered for 8-10 minutes
Split each chicken breast in half and serves 8
