Ingredients

3 cups (or 1 1/2 lbs) grated zucchini
2 eggs
1 egg white
1/4 c crumbled feta
3/4 c wheat flour
3/4 tspn baking powder
salt and pepper and basil to taste
1 tbspn olive oil for skillet cooking...
Directions
Gate the zucchini and press out as much extra liquid as possible then transfer to a mixing bowl.
Add the eggs and egg white, the crumbled feta and the wheat flour and baking powder (you may want to mix the baking powder and the flour together first and then add)
add in the pepper salt and basil to and heat up a good sized skillet. Med-high heat.
The better quality the skillet (non-stick) the better the pancakes will come out and they will also require less olive oil for cooking.
drizzle a little bit of the oil on the cooking surface - just enough 1/3 tbspn - to coat the surface. do 1/3 cup dollops of the mixture onto the skillet and press them out fairly flat. Allow to cook 2-3 minutes on each side - until browned. set aside on a paper towel and add another bit of oil and do another batch. makes about 15 pancakes - each one being a "serving" in the calorie calculator. yummy!
