Ingredients

    1 1/4 Flour
    1/4 c. finely chopped pecans
    2 tsp baking powder
    1 tsp cinnamon
    1/4 salt

    1 egg
    1/3 c packed brown sugar
    1 c milk
    1 c grated carrots
    1 tsp vanilla

Directions

In a large bowl combine the first 5 ingredients.

Combine the remaining ingredients in a small bowl. Stir into the dy ingredients just until moist.

Pour batter by 1/4 c onto a grease hot griddle. turn when bubbles form on the top of pancake: cook until 2nd side is golden brown.

    I think with a little more cinnamon these would be good w/o any thing on top! Smelled great while cooking! - 7/23/11
