Ingredients

    Ingredients:
    Vanilla Wafers fat free, 12 wafer (remove)
    Egg, fresh, 2 large (remove)
    Vanilla Extract, 1 tsp (remove)
    Neufchatel Cheese, 16 oz (remove)
    3/4 cut stevia
    1.5 cup frozen strawberries
    1/4 cut stevia

Directions


Preheat oven to 350 degrees. Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes.

Meanwhile, stew strawberries in a small sauce pan over low heat. Add 1/8-1/4 cut stevia and breakup with a spoon.

Allow tarts to cool completely. Serve with strawberry copote on top, or pie filling of your choice.
