Ingredients

1 C Aunt Jemima Whole Wheat Blend Pancake Mix
1 C Wheat flour, white, bread, enriched
1/3 C Brown Sugar
2 tsp Baking Powder
1 tsp cinnamon
1 C Almond Breeze Almond Milk, Original
1/3 C Canola Oil
1 Egg
1 tsp Vanilla Extract
1 Apple, peeled, cored and chopped
Topping:
4 tsp sugar
1tsp cinnamon
Directions
Mix dry ingredients in a medium bowl. Mix wet ingredients in a small bowl and pour into dry ingredients and stir until JUST combined. Peel, core and chop apple. Fold apple pieces into mixture.
Spray muffin tins or use liners. Separate batter into 18 equal portions in muffin tins. Top each with cinnamon-sugar mixture and bake at 400 for 15-18 minutes.
Serving Size: Makes 18 muffins. 1 muffin = 1 serving.
