Introduction

Number of Servings: 6

Ingredients

    15 oz. Whole Black Beans
    1 Medium Zuchinni
    1 tsp. minced garlic (clove)
    2-3 drops of hot sauce
    2 tsp. hot taco seasoning
    I chopped Jalepeno Pepper
    1 tbs. chopped White Onion
    juice from 1 lime
    1 tbs. light sour cream
    Brown rice
    a pinch of Cayenne Pepper
    carb balance flour tortillas
    chunky salsa




Directions

Make brown rice according to instructions.

Black Bean Mixture:
Heat on low the can of black beans, rinsed. Add sliced zucchini cut into 8 pie cut pieces, garlic, hot sauce, taco seasoning, lime juice, jalepeno pepper, onion and cayenne pepper.

Heat tortillas in pan.

Make taco adding black beans, rice, sour cream, and chunky salsa.

Makes approx. 6 servings (tacos) and is good for lunch or dinner. It's spicy and tasty. I'm proud of my creation.
