Introduction
If your sausage comes from the butcher as salt & pepper pork sausage, omit the salt. Don't skip the nutmeg because you think it will make your sausage sweet, it won't and it adds a very nice depth to the sausage. You can add the same seasonings to ground turkey if you'd like. Ingredients

1 pound ground pork
1/2 T. salt
1/2 t. sage
1/8 t. nutmeg
1/3 t. pepper
1/8 t. thyme
1/8 t. poultry seasoning
Directions
Mix your pork with the seasonings and shape into patties. Sometimes I pat mine into a square and then cut into pieces for uniformity. Brown in a cold skillet over medium-high heat until done (no pink in the middle). I never time it, I just eyeball it and cut one patty open.
