Introduction
This recipe tastes great as is - not too sweet and just moist enough - but you should definitely play around with the ingredients and make it your own! Ingredients

1 cup cooked Quinoa (follow package directions)
3 medium-size ripe bananas
1 tsp cinnamon
1 tsp vanilla extract
1/4 cup plain non-fat yogurt
1/4 cup vegetable oil
1/2 cup Splenda
1 large egg
1 tsp baking soda
1 tsp baking powder
1 cup whole wheat flour
1 cup white flour
dash salt (optional)
Directions
Preheat oven to 350 degrees Fahrenheit.
Place the cooled cooked Quinoa in a mixing bowl and stir together with the bananas. Add the cinnamon, vanilla, salt, yogurt, oil, sugar and egg and continue mixing.
In a separate bowl mix together the baking soda, baking powder and flour. Add to the wet ingredients 1/2 cup at a time until all the dry ingredients are incorporated.
Use Pam (or similar) spray to grease a loaf pan and pour in the batter. Bake in oven for 1 hour.
Remove the bread when done and let cool for as long as you can wait! Enjoy!!
