Ingredients

1 T olive oil
10 boneless pork chops
2 (10.75oz) cans condensed cream of celery soup
1 c skim milk
1 c sour cream
1 t salt
1 t pepper
1 (32 oz) pkg frozen hash brown potatoes, thawed
1.5 c shredded cheddar cheese, divided
1 (6oz) can French fried onions, divided
Directions
Preheat oven to 350 degrees. Heat oil in large, nonstick skillet over medium-high heat. Add pork chops and cook about 5 minutes per side. Remove from skillet and drain on paper towels.
In a large bowl, mix together soup, milk, sour cream, salt and pepper. Stir in potatoes, half the cheese and half the onions. Mix together and spread mixture in the bottom of a large baking pan, which has been lightly sprayed with cooking spray. Arrange pork chops over mixture.
Cover dish and bake for 40 minutes. Remove cover and top with remaining cheese and onions and bake uncovered for an additional 5 - 10 minutes.
