I am a fan of Indian food and have modified most of the dishes I have tried, this being one of them. Usually, Butter Chicken does not include veggies, but I like them mixed in. Ingredients

    *Smart Balance Buttery Spread, 2 tbsp
    Onions, raw, .1/2 large Chopped
    Green Peppers (bell) 1/4 cup, chopped
    Garlic, 3 cloves, minced
    Garam Masala Spice, 1 tbsp
    Ground tumeric, 1/4 tbsp
    Chicken Breast, no skin, 3 breast, bone and skin removed, chopped
    Mixed Vegetables, frozen, 3/4 pack (2-1/2 lb)
    Crushed Tomatoes, 1 large can
    *Organic cane sugar, 2 tsp
    Salt, 1 tsp
    Yogurt, plain, low fat, 1/2 cup

Directions

In a skillet, melt butter and add onion, peppers and garlic and saute. Add spices and mix well, then add chicken and coat pieces well in sauted mixture. Cook chicken until done. Add crushed tomatoes and sugar. Add salt to taste, then add yogurt. Add mixed veggies and simmer until throughly hot. Serve with brown rice, or Basmati rice.
