Introduction

The recipe called for a sprinkle of olive oil and parsley, also. I didn't add them. But I did add a can of chopped, stewed tomatoes. And served it with pita bread. Ingredients

    1 large onion, chopped
    1.75 cups red lentils
    7.5 cups vegetable broth (I used chicken broth)
    1 tsp cumin
    1 small lemon for its juice
    olive oil
    pepper
    chopped parsley (for garnish)

Directions

In a saucepan, simmer onions, lentils, stock, and pepper for 45 minutes or until the lentils have disintegrated. Add water to thin the soup if necessary. Stir in cumin and add lemon juice to adjust seasoning to taste. Add a sprinkle of olive oil and parsley.

Serving Size: makes 8 to 9 1-cup servings
