Ingredients

2 boneless skinless chicken breasts
Salt and Pepper
2 T Flour
2 T Olive Oil
Small Onion Diced
2 Cloves Garlic
4 Cups Mushrooms
1/4 Cup White Wine
1/2 Cup Chicken Broth
Juice of 1 Lemon
2 T Butter
Zest of 1 Lemon
Parley for Garnish
Directions
1. Season chicken breasts with salt and pepper, then dip in flour.
2. Heat olive oil on skillet and add chicken, cooking until golden brown on both sides.
3. Add onion, garlic, and mushrooms to pan and cook 6-8 minutes until soft.
4. Deglaze pan with white wine, until half evapourated.
5. Add chicken stock and lemon juice and bring to boil.
6. Melt butter in microwave and add lemon zest.
7. Add lemon butter to pan and swirl around.
8. Cook on low heat until sauce is thickened.
9. Enjoy! Serves 4 (half breast/person)
