Introduction

This recipe can be eaten alone as a tasty side or used as a filling for burritos, tacos, omelets, and anything else you can imagine! My favorite way to eat it is for breakfast with a fried egg on top and a corn tortilla on the side! Yum! Ingredients

    Olive Oil, 1 1/2 tbsp
    White onion, 1/2, chopped
    Garlic, 2 cloves
    Mexican Grey Squash, 3 cups, chopped
    Mushrooms, 1 1/2 cup, sliced
    Chopped, Roasted, Green Chile, 3/4 cup
    Sweet Corn, Fresh, 1 ear
    Lime Juice, from 1
    Fresh cilantro, 2 tbsp

Directions

To a large saute pan, add oil and garlic. Cook for about a minute, add onion. Cook for about another minute, add squash, green chile, and corn (removed from ear). Saute for about 5 minutes until squash is getting tender. Add mushrooms, lime juice, cilantro, and salt and pepper to taste.
