Ingredients

    Salad:
    1 1/2 cups dry soybeans, soaked
    1 1/2 cups dry red wheat berries, soaked
    6 scallions, finely chopped
    2 medium carrots, finely chopped
    2 small cucumbers, seeded & finely chopped
    1/2 red bell pepper, finely chopped
    1 cup cottage cheese 2%
    1 cup minced flat-leaf parsley
    1/2 cup minced fresh dill

    Dressing:
    1/2 cup cider vinegar
    2 teaspoons kosher salt
    Freshly ground black pepper, to taste
    1/2 cup light mayonnaise
    3-4 cloves of garlic, minced
