Ingredients

    2 celery stalks, chopped
    1 cup carrots, chopped
    1 cup potatoes, chopped
    1 cup broccoli, chopped
    1 large can diced tomotoes
    4oz red lentils, rinsed only
    1 can red kidney beans (~15 oz)
    Dissolve 2 cubes bouillon in 4 cups of boiling water

Directions

Fry celery in 1 TBSP vegetable oil for 3-4 minutes. Add stock, carrots and potatoes. Bring to boil and cook for 5 minutes. Transfer to soup pot and stir in broccoli, tomatoes, lentils and beans. Add 1 tsp paprika, salt and pepper. Let simmer for 1 hour before eating. Can substitute fresh tomatoes for canned eliminating ~ 170 g sodium.

Serving Size: Makes large pot full
