Ingredients

White Rice, long grain, 1 cup
Celery, 1 stalk, small chopped
Carrots, 1/4 cup, chopped
Pork, top loin no fat, raw, 1 lb
Chicken Broth - 99% Fat Free, 1 1/2 cup
Chili powder, 1 tbsp
Garlic powder, 1 tbsp
Salt, 1 tbsp
Pepper, black, 1 tbsp
Olive Oil, 1 tbsp
Onions, raw, 1/4 cup, chopped
2 cups od diced canned tomatoes
Directions
Pre-heat oven at 400°F
In an oven safe casserole place the carrots, celery, onion and olive oil.
Cut pork loin in 1/2 inch slices and spead over the bottom of the casserole.
Add diced tomatoes over the pork and then the rice over the tomatoes, to make nice layers.
Add the rest of the ingredients and cook in over for about an hour or untill the meat is done and the rice is soft.
