Ingredients

    1 cup whole wheat pastry flour
    1/2 cup rice bran flour
    1 cup reg. flour
    1 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    2 over ripe bananas
    1 mango peeled and cubed
    3 lg eggs
    1 cup canola oil
    1/2 cup splenda sugar blend for baking
    1/2 cup agave syrup/nectar
    1 tsp vanilla or almond extract

Directions

Combine flours, salt, baking soda and cinnamon and set aside. In large bowl mash fruit add eggs, oil, splenda, agave nectar (1/2 cup) . Stir in flour mixture until blended, do not over beat. Divide batter into 2 greased loaf pans or greased and floured bundt pan. Bake at 350 for approx. 50 min. test with toothpick if batter sticks to toothpick then bake additional 5 min increments watching closely. Test frequently. Even better the next day or two later!

Serving Size: Makes 2 - 10 serving loaves or 1 bundt cake
