Introduction

Ingredients

    12 oz. beef liver
    1/4 c. arrowroot flour
    1/4 c. gluten free flour
    Seasoning to taste (these are mine):
    a. pinch red pepper flakes
    b. 1/4/ tsp. allspice
    c. 1/4 tsp curry
    d. 1/4 tsp. Spike
    e. 1/4 tsp. turmeric
    1 raw egg
    1 Tbsp. coconut oil
    4 or more sweet onions, peeled & sliced


Directions

Preheat oven to 350º. Crack egg and whip; stir in 1 tsp. coconut oil and a splash of water. Add preferred spices to flour. Cut the liver into 4 pieces. Dredge each piece of liver first in the arrowroot flour, then the egg wash, then the gluten-free flour and place on greased cookie sheet. When all liver is coated, place in oven and cook for 20 minutes. While liver is baking; stir fry sliced onions in 2 tsp. coconut oil until desired consistency; the softer the sweeter the taste to me. I serve this with garlic mashed potatoes.
