Introduction

This a flavorful soup I developed using a black bean stew recipe and adding to it. To make it even lower in fat, you can substitute fat-free ham for the bacon, or leave it out entirely. Ingredients

    1/2 cup chopped onions
    1/2 cup chopped celery
    3 cloves minced garlic
    3 slices low-sodium bacon, diced or 8 oz fat-free ham, diced
    1 14-oz can no-salt tomatoes
    1 10-oz can diced tomatoes with chilis
    2 cans black beans, drained and rinsed
    4 cups beef broth, low sodium
    1 pkg frozen cubed butternut squash
    1 c. frozen corn
    2 links of chicken sausage w/smoked mozzarella & artichoke, cut into bite-sized pieces.
    1 Tbsp. ground cumin
    1 c. dry sherry
    1.5 Tbsp. balsamic or red wine vinegar
    salt to taste and cracked black pepper

Directions

If using bacon, saute diced bacon until crisp and remove. If not using bacon, spray pan with cooking spray and saute onions, celery & garlic. (If using oil, add this to the count.) Add tomatoes, beef broth, beans, cumin, squash, vinegar, sherry, black pepper, and reserved bacon or ham. Simmer about 15 min. Add chicken sausage pieces and simmer another 5 minutes.

Serving Size: Makes about 10 1-cup servings.
