Introduction

High protein, high fiber, high nutrient, very low sugar bars. High protein, high fiber, high nutrient, very low sugar bars.

Ingredients

    These bars are a good meal replacement, but not very sweet--which is the point. Most protein bars are packed with enough sugar to make a cookie. These bars are very high nutrient while still having a very low glycemic value. Try adding 2 tbsp unsweetened cocoa powder, or 1 tsp baking powder to make a fluffier, cake-like bar.

    2 cups pumpkin
    2 eggs (replace with 2 tbsp chia seed plus 4 tbsp warm water to make vegan)
    2 tsp vanilla
    1/2 cup water
    4 tbsp agave nectar

    1 cup soy protein powder
    1-2 tsp cinnamon
    1 cup crushed GoLean original cereal
    1/2 cup rolled oats
    1 cup ground flax meal
    1/2 cup wheat germ
    1/2 tsp nutmeg
    1/2 tsp clove
    2 tbsp hemp seeds
    1 tsp kosher salt
    1/4 cup raisins


Directions

Preheat oven to 325.
Mix dry ingredients together. In seperate bowl, mix wet. Mix together dry and wet.
Lightly oil or spray a 9x9 baking pan and dust with cinnamon.
Bake 40 minutes at 325, or it passes the toothpick test.


Serving Size:  Makes 10 bars.

    Excellent! Not too sweet, not too dense (I did add the baking powder) and I made them as muffins for a snack on the go.
    I substituted dried cranberries for the raisins, and sprinkled chia seeds on top. I ordered the hemp seeds from Amazon, since they are hard to find in stores.

    Couldn't find hemp seeds, but turned out fine without. Next time I will make them in mini-muffin tins and store in snack bags. One whole bar is kind of heavy, but as little muffins they will be great for snacking. - 7/25/12
