    olive oil 2TBS
    butter 2TBS
    onion 3/4 cup
    green pepper 1/2 cup
    garlic 3 cloves
    beef broth - 3 cups
    left over steak (about a cup chopped)
    shredded cheese (I used pecorino romano) - 1/4 to 1 cup depending upon taste


heat oil and butter in pan, add onions, peppers, garlic and cook for about 3 minutes. Add rice, stir to coat with oil and cook for another 2 minutes. Then begin to incorporate the broth one cup at a time, letting the broth absorb into the rice before adding another cup. After two cups of broth stir in the meat, then add remaining broth. When that is fully incorporated stir in the desired amount of cheese
