Introduction
Delicious, very basic hummus - kids LOVE this! Great for dipping with veggies (our favorites are carrot sticks and bell pepper strips) or pita chips. This is a base recipe, so it's great alone or you can vary the spices or add other flavors; I've done garlic and roasted red peppers. I can't wait to see what everyone else comes up with! Ingredients
-
2 cans of reduced sodium chickpeas/garbanzo beans (I used Bush's)
1/4 cup fresh lemon juice (yes, it matters. i have used bottled in a pinch though)
3 Tbsp tahini
2 Tbsp Olive Oil
1 tsp salt
generous sprinkle of cumin and paprika, opt. (I'm guessing I use about 1/8 tsp)
Directions
Dump all ingredients into food processor and blend. Eat immediately or refrigerate at least a couple hours for even more delicious flavor. Also freezes well.
Tip for the lemon juice (because it really does make a huge difference that it's fresh): buy a big batch of lemons, juice them, and freeze the juice in ice cube trays. Keep them in the freezer then defrost as needed.
Serving Size: Makes about 8 1/4-C servings
