Number of Servings: 36

Ingredients

    6 Med russet potatoes scrubbed & diced
    8 stalks celery
    1 med onion diced
    4 Med carrots chopped
    4 Cups fresh corn
    5 cups of lean ham
    1 stick butter
    8 TBS EVOO
    1 Cup unbleached flour
    4 cups 2% fine shredded cheddar
    3 cups Extra sharp fine shredded cheddar
    12 cups water
    8 cups of 1% milk
    Natures Seasoning Salt
    Pepper

Directions

Dice all veggies and boil in 12 cups of water for 10 minutes, add diced ham. Melt one stick butter and 8 TBS EVOO add flour and whisk for a paste and slowly add milk and cook until thickened whisk in cheese. Add cheese mixture to veggie mixture. Simmer, top with small amt of cheddar cheese. Serve this chowder with Pumkin Spice Muffins for a complete and nutritious dinner. Enjoy !!
