Introduction

Ingredients

    MARINADE:
    1/4 cup brown sugar, packed
    1/4 cup soy sauce
    1/4 cup water
    1/4 cup olive oil
    1/4 tsp lemon pepper seasoning

    COATING:
    3 tbsp plain bread crumbs
    1/4 cup of flour
    3 tbsp mined dried cherries
    1 cup crushed pecans

    6- 5oz. salmon filets

Directions

Prepare the marinade in a zippered bag and place the filets in the marinade. Marinade for at least 30 minutes. Increase time for more flavor.

While the filets are marinading, prepare the coating by crushing pecans to fill one cup, add flour, bread crumbs and minced dried cherries.

Preheat the over to 350 degrees and spray a metal pan with nonstick spray.

Remove the fish from the marinade and coat in the pecan-cherry coating. Place in the pan and bake for 45 minutes or until the pecans turn golden brown and the filets are done on the inside.

Serving Size: Makes 6 filets
