    2 Tbsp. EVOO

    4 boneless, skinless chicken breast

    Freshly cracked pepper

    1 container of white mushrooms

    1 medium shallot

    1 tomato

    2 cups chicken broth

    1 Tbsp dried Tarragon


STEP 1 - Preheat oven to 425 degrees. Heat oil in cast iron skillet over medium heat.

STEP 2 - Place chicken breasts in skillet. Sprinkle with freshly cracked pepper. Cook for 5 minutes each side.

STEP 3 - Remove chicken, set aside.

STEP 4 - Place mushrooms in skillet. Cook for 5 minutes, stirring occasionally.

STEP 5 - Add shallots and cook for 2 minutes.

STEP 6 - Add tomatoes, chicken broth & tarragon. Bring to boil, then simmer for 5 minutes.

STEP 7 - Return chicken to pan and place in oven. Bake for 20 minutes.
